Red Pepper Croutons

It's all about the croutons.

All right, all right. A salad should be about the vegetables and not about the bread. But come on! The crouton is the gift you give yourself for eating that tomato or carrot.

For lunches during the weekday, I'll make a salad and there is something about these croutons that make a simple salad extra special.

Plus, it's easy.

All you need to make your own croutons:

Loaf of focaccia
3 Tablespoons of red pepper spread
Olive oil

Preheat oven to 350 degrees. Chop focaccia into bite-sized chunks into a big bowl. Add 3T of red pepper spread. Mix until bread is coated in spread. Drizzle olive oil on a baking pan and spread bread mix onto pan in a single layer, coating in olive oil. Bake for 25 minutes.

Also, you'll have red pepper spread leftover and the spread is not only good for making croutons but for sandwiches, dips, or pasta.

Never eat a boring crouton again, my friends!
